Wednesday 14th        Middle Eastern Mezze Evening, 6.30pm to 9pm, £65

The cuisine of the Middle East is a delight for vegetarians: zesty bean dips and falafel, aromatic roasted vegetables with sumac, labna cheese, honey drenched sweets all using the best seasonal vegetables and herbs. This evening class will focus on the cuisines of Egypt, Jordan, Israel, Lebanon, and Syria whose simple, fresh and healthy foods are a delight to make and eat throughout the year.

 

Thursday 15th      Tempeh and Tofu Evening Workshop with Lucie Cousins, 6.30pm to 9pm, £65

Join Lucie, our fermentation expert and learn all about how to make tempeh and tofu. Fermented foods are thought to boost the immune system and are beneficial to stomach and digestion well being. During the class, we will delve into the world of tempeh and tofu, you will learn how to get started at home, and the best equipment to use and the differences between fermented and non fermented soya bean products.

 

Friday 16th           Acorn Vegetarian Kitchen Masterclass, 10am to 4.30pm, £175

A day with Richard Buckley from Acorn Vegetarian Kitchen designed to teach you how to bring simple tricks and ideas from the professional kitchen to your home cooking. On the day we will cook a classic three course meal from the Acorn menu showcasing the most popular dishes and techniques that make this little restaurant in Bath so popular. Expect to learn about modern setting agents, smoking, fermentation and sorbets as well as a host of professional tricks and classic techniques.

 

Sunday 18th                Chinese Home Cooking, 10am to 4.30pm, £165

Our Chinese cookery course will give you the knowledge and confidence to make Chinese cuisine a regular part of your home cooking. Vegetables are hugely important in Chinese cooking, making it easy to create a vegetarian or vegan Chinese meal at home. This course course is led by Lydia, one of our lead chef tutors who specialises in Chinese cuisine. She will show you how to make her mother's family favourite dishes and introduce you to new ingredients such as fresh lotus root, fresh water chestnuts, Chinese chives and Kai-lan greens.

 

Tuesday 20th              Seasonal Cooking with Riverford, 6:30pm to 9pm, £65

Be inspired to make the most of your vegbox at this creative and friendly evening workshop featuring seasonal Autumn Vegetables from Riverford Farm. This workshop focuses on helping you make the most of a weekly organic vegbox.The evening is open to anyone and each month we use the very best seasonal vegetables. You’ll learn new skills and recipes, pick up hints and tips for getting the most from a vegbox, find out more about the benefits of lovely organic produce and get to know other people with the same interests.

 

Thursday 22nd            Sourdough Baking with Ottavia – short course, 6pm to 9pm, £65

Thanks to a simple structure already tested to suit busy home bakers you can familiarise with all the practical and theoretical aspects of using a natural leaven to bake at home the most delicious and healthy loaves, but most of all you will realise how simple sourdough baking can be, even without professional ovens or equipment. 

Three hours is all it takes to mix, fold and shape a sourdough loaf, ready for an overnight proving, during which the baker can take a well deserved rest. The sourdough buildup to prepare the dough has equally been left to ferment overnight, without much input from the baker. Consider this a deconstructed baking session where you will see all the steps required for preparing and baking a sourdough loaf, but not necessarily in the right order. 

 

Friday 23rd               Summer Alfresco – Half Day Class, 10am to 1.30pm, £85

Eating Alfresco is something most of us wait all winter for, and as soon as the sun is out, there is nothing nicer than sitting outside with a plate or lunch box of something fresh and delicious. Whether it's a BBQ supper, lunch in the garden, or a properly planned picnic, we have plenty of dishes to make eating outside a real joy. Come and learn how to make easy delicious food in our kitchen which is perfectly suited for outside dining.

We love to get the charcoal out and start grilling. However it can often be tricky to get the veggie options right, so we have lots of delicious vegetable dishes that we think would make fantastic BBQ solutions for those occasions.
