About

Taking place in the restaurant, this intimate, hands-on masterclass is designed for both complete beginners and those wishing to refine their bread-making skills.

Award-winning Executive Chef Matthew Briddon will lead the session, sharing everything participants “knead” to know to get started or to enhance their sourdough baking.

The day includes refreshments, a delicious lunch in Iford Manor Kitchen’s restaurant, and all materials and ingredients required for the course.

Participants will learn how to:

  • Start and care for a sourdough mother
  • Make a simple white sourdough loaf
  • Create olive bread
  • Prepare sourdough dough balls (perfect for homemade pizza)
  • Use leftover starter to make sourdough crackers (ideal for cheese and crackers)
  • Apply expert tips and techniques for kneading, shaping, scoring, and baking

Participants will take home:

  • An Iford sourdough starter to continue using at home
  • Four sourdough recipes
  • Their own handmade loaf baked during the session

Timings:
09:30 – Arrival, hot drinks and pastries
10:00 – Masterclass begins
12:45 – Lunch in Iford Manor Kitchen
13:45 – Masterclass resumes, followed by Q&A
15:30 – Finish
