They'll be celebrating some of our favourite VHK ingredients (including their own smoked and cured meats, locally foraged wild ingredients, and more) and one of Italy's best inventions! You'll start by perfecting the techniques for making the basic egg dough. You'll make a delicious filling with local seasonal ingredients, and then roll out our pasta dough to make a filled pasta which we'll cook and serve for lunch with sage and butter. You'll also make Vale Hosue Kitchen's own fresh gnocchi.
In the afternoon, Chiara will demonstrate her techniques for more advanced pasta creations, using natural ingredients like beetroot, spinach and wild garlic to make beautiful coloured pasta, and laminating flowers through your pasta dough for a truly showstopping dish! She'll also show you how to shape pasta dough by hand to make orecchiette, trofi, pici and more.
You'll finish off by making a delicious pasta bake with all the offcuts (there's no wasting good ingredients in their kitchen!) which you'll be able to take home, along with a recipe pack and loads of tips and information.
