Fresh fish is a truly wonderful ingredient in the kitchen, but it can often be a bit intimidating for those who don't cook it regularly, with several pitfalls to avoid. This Fish Cookery Course is designed to provide the confidence needed to create fabulous fish dishes, covering everything from sustainable sourcing to basic preparation skills and delicious recipes.

The course begins with an introductory talk on purchasing ingredients, focusing on how to find and choose the freshest, highest quality fish, as well as navigating the complexities of sustainability. Following this, participants engage in a series of demonstration-led cookery lessons to master essential skills, including filleting, scaling, and skinning fresh fish, the art of smoking and curing, and quick recipes that make it easy to incorporate fish into home menus. The course aims to liberate creativity and empower participants to experiment with fish as an ingredient in their own kitchens.
As with all cookery courses offered, one of the highlights is tasting and enjoying everything prepared during the session, so participants are encouraged to bring a hearty appetite. A scrumptious lunch is included for all attendees, and each participant leaves with a folder of recipes to use at home.
