Made on-site by specialist artisans from Puglia, pizza bases are rustic, simple and made in the authentic Italian style, reflecting pizzas humble origins as Neapolitan street food. Once the classic sourdough base was perfected, experimenting started with alternative flours to create healthier bases that taste genuinely great. Once you try a Dough pizza, you'll love it.
Dough's front man is Emiliano Tunno, a pizza acrobat and instructor who's opened pizzerias around the world. He loves coming up with new and exciting ways to manipulate and change up the dough to achieve a healthier and better base, so expect to see the likes of pizza raviolo, pizza fritta, fresa, meter pizza and pinsa and some you haven't heard of yet on the menu very soon.
Massimo Nucaro cut his teeth as the king of pizza on the festival circuit selling his sought-after pizza's through sister business Green Pepper and Red Tomato, he brings 15 years of expertise and creative vision to the first Dough restaurant here in Bath. It was his own first-hand experience of an intolerance to gluten which started the quest for alternative and health-giving dough.
